STEP : 1
First, wash and clean the vegetables and chop them. Keep all the other ingredients ready.

Heat oil in a pressure cooker. Once oil is hot add sliced onions and sauté.

Once onions become transparent, add the whole spices such as cinnamon, cardamoms and bay leaves. Add green chillies.

Now, add ginger garlic paste and curd. This gives a nice aroma to the kurma. Sauté well till the raw smell disappear.

Now, add all the chopped vegetables of your choice. You can add any 2 or 3 vegetables you like.

Now, add 1 tablespoon of coconut powder. You can also add very little coconut milk.

Mix all the vegetables well. Now add 1 cup or required amount of water. Add required salt and pressure cook for approximately 7-10 minutes.

Allow the pressure to subside. Remove the whistle and open the lid. Check whether vegetables are cooked, if not add some water and cook them in medium flame.
STEP : 9
White vegetable kurma is now ready to be served. Serve hot with chapati. If you want a thin gravy, you can loosen it by adding some water.
