STEP : 1
Rinse and peel the ash gourd. Remove the seeds and the white pith inside. Grate it to 1 cup and keep aside.

STEP : 2
Cut few ash gourd into small pieces and keep aside. This will be fried and added to incorporate crunchiness.

STEP : 3
Take a pan and empty the grated ash gourd into it. Cover it with a lid and put the flame to medium so that the ash gourd gets cooked up well. No need to add water because ash gourd itself contains enough water. After it is cooked keep it aside.

In another pan put 1 table spoon of ghee and add some raisins and cashews (broken into pieces). Saute it until cashews are golden brown in colour and keep it aside.

In the same pan put 1 tablespoon of ghee and when it melts add the cut ash gourd pieces to fry it to golden brown colour and then keep it aside.

In a pan add the sugar and 1 cup of water and keep the flame to maximum until the sugar solution boils.

After it gets boiled up simmer the flame and continuously stir the solution until it becomes a bit thicker( When you touch the solution in hand it should be sticky).

Now add the cooked ash gourd and mix it well with the sugar solution for about 2 minutes.

Then add the fried ash gourd, fried cashews and raisins and crushed cardamom into it and mix well.

STEP : 10
Keep on stirring and sauteing the halwa mixture on low flame and keep on adding 1 tablespoon of ghee at a time whenever the mixture becomes dry. Keep on adding ghee until the halwa separates from the pan.

Let the halwa cool down a bit and transfer it to a serving bowl. Garnish it with some cashews and raisins.
