Ingredients of White chicken biryani
White chicken biryani

STEP : 1
The key ingredients to prepare White chicken biryani,we need chicken,Rice,onions,tomatoes ,coriander leaves,green chillies,black pepper powder,ginger garlic paste,lemon ,garam masala, bay leaf,biryani spices,green cardamom ,mint leaves ,badam,ghee,oil and salt.

STEP : 2
Initially take two cups of half boiled rice or basmathi rice in a seperate bowl.

Add few cups of water along with rice and soak it under 20 to 25 minutes .

To make almond paste,take half cup of almonds or 10 to 15 almonds in a bowl.

To peel off the almond skin,soak the almonds 2 to 3 hours for a smooth paste.

Take a mixie jar,add few ginger pieces and few garlic cloves to make fine paste.

Blend it for few minutes till it becomes soft and transfer it in a bowl,.

After 2 to 3 hours ,peel the almond skin completely and add it in a blender.

Blend it for few seconds by adding little amount of water till it turns nice smooth paste.

Take 500 gram of chicken ,Use chicken containing bones and make it a medium pieces.

For tampering turn on the flame,place a pan add half cup of oil and let it heat.

Add two bay leaf or biryani leaf into hot oil and let it splatter for few seconds.

Add biryani spices like biryani stars and black cardamom and saute in a medium flame.

Add three nos of green cardamoms for a good smell to the biryani and saute it lightly.

Add a cup of onions and saute it for few seconds till it turns golden brown.

Add half cup of ginger garlic paste in a chicken and mix it ,let it cook for few seconds.

Add half sliced green chillies around five to six for more spices and let it cook.

Add the blended into fine coarse almond paste along with the ingredients and mix it.

Add the spicy chicken along with onions and mix it completely.for few minutes,let it blend.

Add a cup of finely chopped coriander leaves and mix it,let the coriander leaves blend with the ingredients.

Add half tablespoon of black pepper powder or white pepper powder along with chicken and mix it.

Add a tablespoon of garam masala powder along with the chicken and mix it well.

Add a cup of thick yogurt or curd along with the gravy and mix it completely.

Add half cup of chopped mint leaves and mix it,let the mint leaves blend with the ingredients.

Squeeze a half inch of lemon or lemon juice few drops and mix it completely.

Add a tablespoon of salt or as per taste and mix it ,turn off the flame ,let the chicken cooked completely.

To cook the rice,turn on the flame ,place a thick vessel and add few drops of oil.

Add biryani spices like biryani stars and black cardamom in a hot oil and let it fry.

Add three to four cups of water into hot oil and let it boil for few seconds.

Add a tablespoon of salt or as per taste and mix it for perfect taste .

Add the soaked rice in a boiling water and allow to boil for few minutes.

After 2 to 3 minutes when the rice is cooked 70 percent and check it .

Strain the water completely ,take away the half portion of boiled rice outside in a plate.

Add the cooled chicken gravy and spread it on all sides like shown in below image.

Cover the remaining boiled rice over the chicken gravy completely ,then cook in a very low flame.

After 5 minutes ,place a griddle on bottom and keep it in a high flame for about 2 to 3 minutes.

After 2 to 3 minutes,open the lid and apply a ghee on top surface then mix it gently.Our tasty white chicken biryani is ready now.
