Ingredients of Vegetable stew
STEP : 1
In jar add 1 cup of grated coconut and grind it using hot water and extract the coconut milk and separate as first and second coconut milk.
STEP : 2
In a cooking bowl add the medium size chopped vegetables such as carrot,beans and skin peeled and small size sliced potatoes.
STEP : 3
Then add green peas,5 green chilies which was half breaks and then add the second and third coconut milk extract and add needed salt.

Then add the 1/4 cup of grated ginger and mix well then cover the lid and keep boiling for 15 minutes till the vegetables are well cooks.
STEP : 5
After the vegetables are well cooked add 1/4 tbsp of lemon juice,mix well and cook for few minutes for the gravy gets tender consistency.

After that add the first stage coconut milk extract and mix well and keep boil for few seconds transfer to the serving bowl.
STEP : 7
For Tempering: Heat oil,add sombu, 2 cloves and 2 cardamon sticks and pour in to that vegetable gravy and mix well till the vegetables are mix together.
STEP : 8
Then finally add the mint leaves and coriander leaves and serve hot with Aappam or with Dosa.It is also best companion with Idiyappam,Neer Dosa.
