Ingredients of Vegetable Sambar
Vegetable Sambar

STEP : 1
One or half Maagi kayi and it should be in small onlythen it good if it turns color in to yellow. it will take more time to boil also not good.

STEP : 2
After washing the maagi kaayi remove the upper layer with knife and again wash with clean water, the cut in to a small or medium pieces

STEP : 3
Take small amount of grated coconut for mixture it will give a good taste and also if you add coconut the samabr will thick.

STEP : 4
Take one onion and peel it and wash it correctly and cut/chop them into five pieces. We will add few to blend and few to the cooker while frying it. Donât add too much of onions also which will be too much of masala.

Take one Tomato and wash it correctly and cut them small pieces We will add few to blend

STEP : 6
A piece of tamarind and one full garlic these two items are taste adders .tamarind gives good taste to the saru or dal and it helps in easy stomach digestion.

STEP : 7
Two tablespoons of sambar powder. This sambar powder is nothing but we prepare it using red chillies, curry leaves, turmeric, coriander seeds (dhanya seeds), and other few spices. This is the important powder we add. If you donât have sambar powder you can add red chilli powder and coriander seed (dhanya powder).

Take two to four green chilli and slightly burn in gas flame and add in bled.

Take small amount of coriander leave and wash it properly with clean water and add in to blend

STEP : 10
To a mixer jar add grated coconut, cut/chop onions, garlic, tamarind, jeera, sambar powder,Green chilli If you donât have you can add dhanya and red chilli powder. Blend it using little water.

The fine paste of the blended mixture is ready. This is the important one for this recipe. This is the masala that we use.dont add too much of water it becomes too liquid. it should be into semi liquid

Now add some oil and chop/cut onions and sauté it well until the onions fry. Else the onions will smell raw giving bad taste

STEP : 13
Add avare kaalu one bowl which is washed well in water. The taste enhancer of this saru. Ensure you donât add too much of these because it brings thick consistency of the saru. and fry it few minuts.

Add the finely chop/cut vegetables that are maagi kaayi it well in the oil which contains onion. So once they fry for two minutes in the oil the raw smell goes off.

Once the vegetables Maagi sauté well with the oil for about two minutes now add the blended masala to the same

After adding the blended masal in to the cooker mixed well and it should be mixed with avare kaalu and Maagi kaayi.

Once blended masala and vegitable mixed well add some water to the cooker.as per the requirments.

STEP : 18
Once vegetable saute with mixed samabar masala , adding of water and mix it well and add salt and close the cooker top lid and let it whistle for 3 times . so then it will be good.wait for three whistle

After 3 time of whistle Maagi kaayi sambaru is ready to eat and after the cooker pressure down open the top lid and check the bake status and taste , then shift to bowl for serve.
