This is a mixed vegetarian dish made using palak ( Spinach ) along with other vegetables and it is sweet and tangy . It is made hot with green chili and mustard paste. The dish is a dry item and can be served both with rice and roti.

Ingredients of Vegetable palak curry

0.25 kg Spinach
1.00 no Potato
0.25 no Pumpkin
3.00 no Pointed Gourd
0.50 no Brinjal
2.00 tbsp Mustard Paste
1.00 no Tomato
0.25 tbsp Salt
0.25 tbsp Sugar
0.25 tbsp Mustard Seeds
2.00 tbsp Oil
2.00 no Chili

Vegetable palak curry

Take the potato, pumpkin, pointed gourd, brinjal and wash them and clean it very well then cut it into small sized cubes as shown in the image.

Heat oil in a kadai and add the mustard seeds and to it then add the chopped vegetable pieces. Fry them very well.

Now add the green chili, tomato and salt, sugar and turmeric and mix all the contents and cook till the tomato softens.

Cook for 10 minutes in simmer till all the vegetables boil and the spinach is blended well with the rest of the contents. Add the mustard paste and mix well. Then serve when all the gravy is dried up.
