STEP : 1
Wash all the vegetables and peel off the skin and fine chop all the given vegetables in to fine pieces;and also fine chop the green chilly and ginger into fine pieces;
STEP : 2
In a pan add 2 cups of water and all the fine chopped vegetables and add some salt and turmeric powder into it;and keep boiling till the vegetables get cooked.

Heat a pan and add oil;then add the mustard seeds;cumin seeds;green chilly;curry leaves;chopped ginger and into it saute for two minutes
STEP : 4
Then add the boiled vegetables into it mix well for two minutes till the water gets dried then add the grated coconut into it and mix well and also adjust the salt at this stage;
STEP : 5
When the water gets completely dried and remove from flame and keep the recipe gets cold for ten minutes then finally add the thick curd into it garnish with coriander leaves and mix well then serve this colorful vegetable kootu with plain rice or with sambar rice or with any mixed rice.
