Veg masala preparation

STEP : 1
Wash and chop all the veggies such as potatoes and carrots and also get some fresh green peas.

STEP : 2
Fine chop one or two medium sized onion and chop some green chilies and ginger into thin slices and some coriander leaves.

STEP : 3
Steam cook or pressure cook veggies such as carrots,potatoes and green peas till it comes to soft.

STEP : 4
When the vegetables are little warm smash them well using a smasher or using a ladle.

Heat a pan add little oil and some mustard seeds and add fine sliced green chilies and ginger slices with them.

STEP : 6
Then add fine chopped onion with them and fry for few seconds till it comes to glassy and transparent.

Then add the steam boiled and smashed veggies into them and stir for a few seconds.

Then add little turmeric powder and enough salt for them and stir well again till it mixes well.

Then add some fine chopped coriander leaves onto them and stir well again for a few seconds.

Then sprinkle half tbsp of lime juice over them and stir well again and switch off the flame.

When the veggie mixture comes to little warm then divide a small portions and make like a small ball size.
Stuffed Veg bonda preparation

STEP : 1
Take a mixing bowl add 3/4 cup of Bengal gram flour and 2 tbsp of rice flour.

STEP : 2
Add the spice powders such as red chilly powder,garam masala powder,cumin powder,salt and a pinch of hing with them.

STEP : 3
Add water slowly and slowly and mix the batter without any lumps,the batter should be nor thin neither thick it should like a dosa batter.

Heat a pan add one and a half cup of oil for deep frying,now take one prepared ball sized vegetable dough.

Dip the dough into that gram flour batter which was fully immersed,better to use a spoon for this.

STEP : 6
Place the bonda dough onto the hot oil,do this for all dough for making all these bonda.

STEP : 7
Deep fry the stuffed vegetable bonda and bring to boil on both sides by flip them around.

STEP : 8
When the outer flour gets boiled and the color comes to light golden brown now remove from flame and serve hot with spicy chutney or sauce.
