Making a cake is a big challenge and I guess no one can bake their first cake itself to perfection.
After lots of trials and errors, I got this perfect cake recipe which I would love to share with you all. This is a basic vanilla cake recipe which is very soft and moist.
Am not adding any frosting to this cake as I love eating creamless cakes. But you can change this cake even into a birthday cake or anniversary cake by applying suitable frosting.
So after my first success with this vanilla cake, I just felt like flying in the sky. Because baking is my biggest passion and I always want to make our own birthday cakes.
After baking this cake and till date, we are not ordering any cake from the bakery. So yes let’s come to our vanilla cake easy recipe.
How to make vanilla cake?
Vanilla cake ingredients are very easily available at home and the only thing you have to buy from the grocery store is vanilla essence. This homemade vanilla cake is similar to bakery style.
This is a cake with egg. Am using around 2 eggs. If you want an eggless version, mix 2 tbsp of vinegar in ¼ cup of milk, leave that mixture for around 10 minutes and then add it into the cake mix. This mixture is the best replacer of eggs.
Am using maida or all purpose flour for making the cake, you can use whole wheat flour and organic brown sugar or jaggery for a healthier version of vanilla cake.
For some crunchy taste, I am using some cashew and raisins. You can use tuti fruti or any other nuts of your choice.
Am not using baking soda in this recipe, if you are making eggless versions, then add ½ tsp of baking soda into the cake batter. Instead of butter you can also add oil of the same given quantity to get a soft moist cake.
How to make vanilla cake in the microwave? Preheat the oven at 350 F, place the cake tin inside the oven and cook it for around 30 to 35 minutes or until a knife comes clean.
Baking time differs as per the size of your cook, so always check your cake with a knife 5 minutes once after passing 35 minutes.
You can also bake the cake in a pressure cooker if you don’t own a microwave at home. Put some salt in a cooker and a wire rack, preheat it for 10 minutes.
Then place the prepared cake tin on the wire rack and cook it for around 45 to 50 minutes in low flame.
After baking, you have to wait until the cake gets cool before demoulding it. Otherwise you will end up with cake crumbles instead of a neat cake. So yes we are done with the cake.
You can eat it just like that or with any of your favourite frosting at the top.
Ingredients of Vanilla cake
STEP : 1
Take the cashew nut and soak it in water. Take the raisin and soak it in water. Take the vanilla essence. Take the butter to be molten before adding to the mixture.
STEP : 2
Take the maida and mix it with the sugar, baking powder and take 2 eggs which would be added to the maida to be beaten uniformly.
STEP : 3
Add the egg, molten butter, vanilla essence to the maida mixture and blend uniformly with a hand beater or spoon to make the mixture consistent.

Once the cake mix is beaten and is mixed uniformly add the soaked cashew and raisins on top as shown in the picture.

Put the mixture in a microwave oven and bake it till the content become fluffy and non sticky and the edges can be separated from the container.
STEP : 6
Take it out from the microwave and let it cool for some time by keeping it open or for a while in the refrigerator. Once its cooled take out the cake from the baking bowl into a plate as shown in the image so that it can be cut into small pieces. The small pieces are then ready to be served as tiffin.
