Ingredients of Thinai payasam
STEP : 1
The key ingredients to prepare Ragi kheer;we need Ragi;milk ;Oats;cardamom powder;dry ginger powder;cashews;raisins;jaggery;ghee and salt.

Initially turn on the flame ;add a tablespoon of ghee and let it melt in low flame.
STEP : 3
Add a cup of finger millet or ragi and roast it in a low flame.
STEP : 4
When the ragi raw smell completely goes away ;turn off the flame and keep aside.

In a same pan once again add a tablespoon of ghee in a low flame.

Add half cup of oats in a ghee and roast it for few seconds till it turns soft.

At the same time ;add quarter litre of milk along with the finely roasted oats.

Add a pinch of salt in a boiling milk so that it gives a blended taste.

Add a cup of powdered jaggery or organic sugar in a thick vessel to make syrup.

Add a cup of water in it ;mix it and leave them to boil completely.

After few minutes jaggery syrup starts bubbles and it completely dissolves turn off the flame

Strain the prepared jaggery syrup using strainer to seperate the impurities in a seperate bowl.

When the milk boils and scrape the side edges using spoon at regular intervals of time and store the curdling..

Add little by little jaggery syrup and stir it at regular intervals to avoid foaming.

Add half tablespoon of cardamom powder or elaichi powder and mix it for better smell.

Add half tablespoon of dry ginger powder or sukku powder and mix for better smell.

Add the roasted ragi in a boiling milk and stir it continuously side by side.

Let's roast the nuts;place a kadai add the remaining tablespoon of ghee and let it melt.

Add quarter cup of raisins and mix it for better taste and fry it in low flame.

Add few broken cashews in a ghee and mix it;let them fry in a low flame.

Add the roasted nuts in a boiling ragi kheer and mix it ;let it cook.

Turn off the flame and allow to cool for few minutes and transfer it in a serving bowl;Our Ragi kheer is ready.to serve.
