STEP : 1
The key ingredients to prepare sweet potato kheer ,we need sweet potato,coconut,cashewnuts ,badam,ghee,raisins,cashewnuts,milk,cardamoms,rice,sugar,plums and salt.

Initially wash the two nos of sweet potatoes ,always use a lengthy sweet potato rose in color.

For easy and quick boiling ,cut the sweet potatoes into equal parts and keep it aside.

Turn on the flame,place a pressure cooker then add the sweet potato pieces in it.

Add two cups of water in it and leave it to boil for few seconds.

Add a tablespoon of salt or crystal salt for blended taste along with the sweet potatoes .

Close the pressure cooker lid and leave it for 2 to 3 whistles on high flame.

Take half cup of half boiled rice or basmathi rice in a bowl and soak it .

To make almond paste,take half cup of almonds or 10 to 15 almonds in a bowl and soak it.

After 5 minutes strain the water and add the strained rice in a blender jar.

Blend it once then transfer it in a plate ,don't blend it too much nice.

After 2 to 3 whistles ,when the pressure calms down ,open the cooker lid slowly

Drain the water completely using strainer if it is too hot add it in a warm water.

Now peel the boiled sweet potato skin and seperate the sweet potatoes in a seperate bowl.

Mash the boiled sweet potatoes completely by using hands or by using potato masher for it.

At the same time,Turn on a low flame,place a vessel ,add a tablespoon of ghee

Add the boiled nicely mashed potato mixture in a ghee and saute it for few seconds.

Add a cup of warm milk to avoid burning on the bottom of the vessel.

At the same time ,turn on the flame ,place a thick pan add quarter litre of milk.

After 10 to 15 minutes ,peel the almond skin completely and add it in a blender.

Blend it for few seconds by adding little amount of water till it turns nice smooth paste.

Add the blended into fine coarse almond paste along with the mixture and mix it.

When the milk boils and scrape the side edges using spoon at regular intervals of time and store the curdling..

Add the blended rice mixture along with the boiling milk and mix it ,let it cook.

Add a fresh grated coconut along with the potato and mix it for few seconds.

Add the boiled milk into the cooking mixture and stir at every intervals of time.

Add the required amount of sugar or according your taste and mix it completely and let it cook.

Add few dry plums in a kheer ,you can skip it,if you won't prefer plums.

Add 2 to 3 green cardamom seeds, if you not prefer like this add half tablespoon of green cardamom powder.

Let's roast the nuts,place a kadai add the remaining tablespoon of ghee and let it melt.

Add quarter cup of cashews and mix it,You can add crunched pistachios if you prefer.

Add quarter cup of badam and mix it,You can add crunched walnuts if you prefer.

Add quarter cup of raisins and mix it then let it fry in a low flame

Add the roasted nuts in a boiling sweet kheer and mix it ,let it cook.

Turn off the flame and allow to cool for few minutes and transfer it in a serving bowl,our sweet potato kheer is ready.to serve.
