Sweet potato gulab jamun
STEP : 1
Take 3 red potatoes or sweet potatoes as shown in the image. They have to be washed, peeled and boiled to make the gulab jamun.

Once the potato is boiled take it out from the pressure cooker, drain t he extra water and then set it aside for cooling
STEP : 3
Once the potato is cooled, add the cardamom powder and maida and mash very well with hand so that a fine paste is formed.

Make small round shaped balls from the paste in the shape of a gulab jamun and set it aside in a plate as shown in the image
STEP : 5
Heat the ghee in a tawa and add the balls to it and fry them in all sides for about 4-5 minutes on simmer
STEP : 6
Continue frying by turning in different directions so that all sides are fried and turn equally golden brown in color
STEP : 7
Drain off the excess ghee from the gulab jamun and set it aside in a bowl to cool before putting in the sugar syrup.
STEP : 8
Take 4 cups of sugar and 8 cups of water and bring it to boil. Boil till the water reaches to almost 3 cups and the syrup formed is sticky in nature. Set it aside in a bowl for cooling.
STEP : 9
Add the fried gulab jamun in the sugar syrup and let it remain submerged for an hour at least so that it swells. Then it is ready to be served.
