STEP : 1
Our specious day celebration is pongal festival in that festival one of the traditional sweet is sweet pongal. Sweet pongal is made with rice and jaggery. Sweet pongal is an traditional sweet of south india,now to prepare sweet pongal,put a cup of milk in a vessel after getting its boil add one cup of rice and moong dal into the boiling milk.

STEP : 2
Initially half liter milk is to be added in a vessel and add 5 glasses of water along with the milk after adding rice and moong dal into a milk when the water comes up stage shift the vessel in to a pressure cooker make sure we need to soak rice and moong dal atleast 5 mins and wash it completely and add the final water along with the milk,doing this way is our tradition

STEP : 3
Close the pressure cooker and leave it for 5 to 6 whistles to the well boiled rice and moong dal,for 1 cup of rice we can use 500g of jaggery,to melt the jaggery we need to add half cup of water.

STEP : 4
Add half cup of water in a jaggery and leave it to melt till it turns to string consistency after melting stir it continuously till you get a jaggery syrup manner.Make sure the jaggery syrup should not contains too much of thick and also thin,usually the traditional way to make sweet pongal is in this way only instead of using mud pot we using a vessel thatŽs it.

STEP : 5
Now add a pinch of cardamom powder with boiling jaggery syrup,you can also add in this stage a little pinch of camphor to get a good aroma and also you can add ginger powder into a jaggery syrup for a nice taste.

STEP : 6
Now our jaggery syrup is done,now filter it using filtrate,so that it will help you to take the impurities outside.After filtering boil the jaggery syrup once again in a kadai in low flame.

STEP : 7
When the pressure comes down open the cooker and gentle smash the boiled moong dal and rice in a big spoon,make sure don,t smash it too much and finally shift the boiled moong dal and rice into a nonstick tawa and lets keep in low flame.

STEP : 8
After shifting the smashed rice in a nonstick tawa add the filtered jaggery syrup and stir it gently.

STEP : 9
Take a kadai after heating add two table spoon of ghee when ghee melted add the dry fruits such as cashew nuts and raisins,don't add raisins beginning itself because the raisins get over heat and looks black in colour.

STEP : 10
After roasting the dry fruits pour it in a our delicious sweet pongal and stir it gently.
