STEP : 1
The key ingredients to prepare sugar cane kheer,we need rice,sugarcane juice,milk,moong dal,cardamom powder,dry ginger powder,sabudhana,cashews,raisins,jaggery,ghee and salt.

STEP : 2
Turn on the flame,place a pan ,add a cup of moong dal and dry roast it.

Add a cup of raw rice in a seperate vessel,you can add short grains or kolum rice.

Add a cup of water along with the raw rice and let it soak for few minutes.

Add the roasted moond dal along with the soaking rice and let it soak for few minutes.

Turn on the flame,place a pressure cooker drain the water and add in a cooker.

Add two cups of water along with the rice and add little bit of salt.

Close the pressure cooker lid and leave it for a whistles ,it should be semi cooked.

At the same time,Turn on a low flame,place a vessel ,add a cup of sabudhana.

Add a cup of water and let it cook for few minutes till it turns soft.

When it starts frothing cook in a low flame and let it turns soft ,turn off the flame

After a whistles turn off the flame ,slightly open the cooker lid after the pressure comes down.

At the same time,place a pan in a low flame,add two cups of sugar cane juice.

When the juice starts boiling ,add the cooked rice in it and stir it for few seconds.

Add the cooked sabudhana in the cooking kheer and stir at every intervals of time.

At the same time ,turn on the flame ,place a thick vessel add quarter litre of milk.

When the milk boils and scrape the side edges using spoon at regular intervals of time .

Add the boiled milk into the cooking kheer and stir at every intervals of time.

Add the required amount of jaggery or according your taste and mix it completely and let it cook.

Let's roast the nuts,place a kadai add the remaining tablespoon of ghee and let it melt.

Add crunched cashews in a ghee and roast it till it turns golden brown color.

Add quarter cup of raisins and mix it,You can add crunched badam if you prefer.

Now add the ghee roasted nuts into the mixture and mix it well using spoon.

Add a tablespoon of green cardamoms powder and mix it for good smell.and mix it .

Add a tablespoon of dry ginger powder and mix it for good smell.and mix it .

Add a pinch of salt for a taste and mix it ,let it cook and stir it.

Turn off the flame and allow to cool for few minutes and transfer it in a serving bowl,our sugarcane kheer is ready.to serve.
