Ingredients of Stuffed peppers
STEP : 1
first take two capsicums and cut the top 1/4th part of it as shown in the below image. it should look like a bowl after cutting the top part of it.

Once the capsicums are cut into bowl shape, place a roti grill roaster on the stove and roast the 3/4th part or the bowl shaped capsicums by putting them on roti roaster in a medium flame.

Make sure capsicums are roasted in all the sides but they should not loose their shape and get soften. Once they are roasted keep them aside and let the capsicums get cool

Now, take a kadai and put a spoon full of oil and heat it in a low flame
STEP : 5
Add finely chopped ginger garlic into the oil in a kadai and roast them until they lightly turn their colour
STEP : 6
Now add the chopped onion into the kadai and roast until it turns light golden color
STEP : 7
Once the onion is cooked, add all the veggies like grated carrot and cauliflower to it. add chopped coriander leaves as well

mix them well in a kadai and boil for 5 mins and let it get soft.

Once the veggies are boiled, add the spices like cumin powder, cinnamon powder, red chilli powder and salt according to the taste and mix well

Wait until the veggie and spices mixture get boiled and set. now add the cooked millet to the veggie and spices mixture.

mix the cooked millet well in the mixture and cook them until it absorbs the spices well.

once the millet are cooked in the mixture, slowly start stuffing the cooked millet mixture into the roasted capsicum and fill them to the top

stuff the other capsicum as well and decorate the stuffed capsicum with the coriander leaves and serve them hot. no need to reheat the stuffed capsicum again. it can be served like that because the stuff is already hot.
