For Dough making

STEP : 1
Make equal measure quantity if wheat flour and all purpose flour into a large mixing bowl.

STEP : 2
Then add enough salt,obe tbsp of refined sugar and quarter tbsp of baking soda with them.

STEP : 3
Then add one tbsp of fresh yogurt with them,better to use homemade curd and mix them well using a spoon or spatula.

STEP : 4
Then add water little by little gradually,do not add more water which brings the dough very loose.

STEP : 5
Mix well and knead well to get a soft and smooth dough,and keep aside for a few minutes.
For Aloo Stuffing

STEP : 1
Take three medium sized potatoes,rinse well and pressure cooker till it comes to soft.

STEP : 2
When the pressure cooked potatoes remains warm then peel off the outer skin and add it to a mixing bowl and then smash well using a Smasher or spoon.

STEP : 3
Now add the spice ingredients such as red chilly powder,chaat masala powder,fine chopped green chilies,fine chopped coriander leaves.

Then add half tbsp of lemon juice into them and mix well by adding, instead of lime juice you can add anchor powder or pomegranate seeds powder.

STEP : 5
Mix them all well to make soft mixture by adding and keep aside for a few minutes.
For making kulcha

STEP : 1
Now the prepared outer dough should be soft and smooth, divide the dough into small ball sized dough.

STEP : 2
Take one divided dough and flatten them by dusting some dry flour using as circular shape.

STEP : 3
Then take small quantity of prepared also and spice mixture, as placed as centered position.

STEP : 4
Connect all ends by join all the ends at one position which is shown in the picture.

STEP : 5
Sprinkle some white sesame seeds in that joined positions which is shown in the picture.

STEP : 6
Flip it carefully to another side and place some other white sesame seeds onto them.

STEP : 7
Flatten them using rolling pin, carefully rolled it because there is a chance to break and the stuff comes out.

STEP : 8
Heat a flat pan or Tawa, place the prepared also stuffed KULCHA into that hot Tawa.

STEP : 9
When it boils on one side and the light golden brown does and flip it to another side.

STEP : 10
When the KULCHA boils on both side and Sprinkle some oil or ghee onto them.
