Steamed rice cake

STEP : 1
To prepare a sticky and steamed rice cake,lye water is essential but instead of lye water but instead of lye water i used two tablespoon of baking soda,take a one cup rice flour or glutinous(sticky) rice flour now i used rice flour and two table spoon of baking soda into a large steel vessel.

STEP : 2
Now pour one cup of all purpose flour or maida into a vessel, mix all this three ingredients,some of them use glutinous rice flour now i used plain rice flour now mix it well.

Now add two tablespoon of brown sugar then mix all the ingredients,to prepare kutsinta (brown rice cake) i used brown sugar instead of brown sugar you can also add white sugar make sure use a powdered sugar and use it.

Normally to prepare kutsinta a sticky,steamed and brown rice cake,lye water solution(sodium hydroxide) and annatto seeds is required but its ok to prepare without lye water solution and anatto seeds.but i used baking powder and red food colour now add the red food colour in the dry ingredients.

Now combine all this ingredients then add correct measurement of water while mixing make sure the batter should not become watery,it is to be neither thick nor thin and scrape the edges without any lumps and stir it well.

STEP : 6
To save time prepare the steamer while you are preparing the kutsinta mixture before placing steamer into a vessel add water to bottom part of the vessel and lets the water boil,the steamer should be holes type that i shown in the image.

Take a pinoy puto molders that is rice cake plastic cup available in online shopping ,piney where cups contains two inch( one piece) i used medium size molder for this recipe,i was able to made around two dozens pieces of kutsinta

STEP : 8
Be sure grease the mold cups or steamer cups into vegetable oil before you pour the kutsinta mixture,it has different colour i used one or two colour molds,in a mixing bowl,now shift the batter and fill all the cup molds.

STEP : 9
Now transfer the cooking steamer molds to the boiling vessel steam it around 45 minutes till the top is set when touched.

STEP : 10
Now place a muslin cloth or karsa or a thick wet cloth and top of the steamer and let it boil around 15 minutes.

STEP : 11
Now remove the top of the steamer chect the kutsinta is baked completely by using knife if the knife is sticked then the ingredients are not set and leave it 5 to 10 minutes,then open the top of the steamer now the cake is set and leave it cool.

STEP : 12
Now take a separate plate,now take out one by one by using spoon and transfer it on a plate and arrange it,now garnish the kutsinta cake with grated coconut.Now our steamed rice cake is ready to serve.
