Sprout and vegetable gassi to be served with chapatti or roti and even with rice. Very nutritious dish as we use sprouts of so many pulses like moong, chickpeas etc. Vegetable like carrot and potato are also with nutritious value and it is very delicious.

Ingredients of Sprout and vegetable curry

1.00 cup Grated coconut
1.00 tbsp Red chilly powder
0.50 tbsp Coriander powder
0.25 tbsp Cumin powder
1.00 tbsp Oil
1.00 tbsp Coriander leaves
1.00 tbsp Salt
0.25 tbsp turmeric powder
0.25 tbsp mustard seeds
0.25 tbsp cumin

Sprout and vegetable curry

Pressure cook sprouts and vegetables by adding turmeric powder and salt to taste and keep aside.

Take a mixer grinder add grated coconut, red chilly powder, coriander powder, cumin powder and little water. Grind to a fine paste and keep aside.

Take a medium pan and put oil into it. When oil heats add mustard and seed and when it splutters add cumin. When cumin crackles add chopped garlic and cook till golden brown. Now add chopped onion and cook till golden brown. Now add chopped tomato and curry leaves and cook till tomato softens.

Keep the lid and cook till one boil comes. Now sprout and vegetable gassi is ready. Garnish with coriander leave and serve.
