Ingredients of Soan papdi
STEP : 1
The key ingredients to prepare soan papdi, we need gram flour, maidasugar,green cardamoms,yellow food color ,lemon juice ,ghee,vanaspathi and nuts.

Turn on the flame ,place non stick tawa ,add two to three tablespoon of ghee and let it heat for few minutes.

Add half cup of vanaspathi or dalda along with ghee and let it heat for few minutes.

Gradually add a cup of all purpose flour ,mix it without any lumps using spatula.

Add a cup of besan or chickpea flour along with the maida and dry roast it.

Prepare a thin batter ,it should not be too thick consistency, it should be pouring consistency.

Add half tablespoon of green cardamom powder along with the batter then mix it for good smell.

Turn on the flame,place a long vessel to make sugar syrup add two cups of sugar .

Add 3/4th cup of water then stir it for few seconds till the sugar dissolves.

Check the sugar turns string consistency if not let it boil for another 2 to 3 minutes.

Squeeze or add few drop of lemon juice on a boiling sugar and let it boil.

Take a seperate long and flat plate , apply a tablespoon of ghee on all sides.

When the sugar syrup turns ball consistency turn off the flame and pour it in a plate.

Gather the sugar syrup continuously using spatula when it is hot and stretch 2 to 3 strips.

When the batter raw smell goes away ,turn off the flame Pour the batter in another plate .

Place the stretched sugar syrup and add it in a smooth batter and mix it.

Take a seperate plate ,grease with little bit of ghee and add the mixture and shape it.

Garnish with nuts like raisins,cashews,badam on top of the mixture and press it gently on top and cut it.
