This is a colored fried rice made from aroma rice along with chicken chunks. It is red in color and is tangy in taste. This is a colorful dish and is rich and spicy. It is made colorful because of the multiple bell peppers.

STEP : 1
Take the basmati rice and washi t very well. Add 2 cups of water for 1 cup of rice and then steam it to make the rice.

Chop the onion into slices, also chop the garlic and the green chili. Bell peppers are chopped into small pieces. The tomato is chopped into pieces. The carrot is diced and so is the beans.

Take the chicken cubes, wash and clean them and marinate well with salt, black pepper and red chili powder as shown.

Heat oil in a kadaia nd fry the chicken till it is tender and starts emitting aroma as shown in the figure.

Add the onion and the garlic cloves as shown in the figure in the hot oil and fry them well.

Now add the beans, carrots, green chili and fry them well by sprinkling some salt into the kadai and cook for a minute or two.

Now add the bell peppers of different color and mix it well in the gravy and cook so that the vegetables soften.

Now add the tomato to the kadai and mix it well and let all the water dry up, cook till all the vegetables are tender.

Now add the rice and mix it well and stir and add a little salt and then it is ready to be served with spring onion toppings.
