Ingredients of Sev puri
STEP : 1
Turn on the flame ;place a vessel ;add tablespoon of oil and let it heat for few seconds.

Add 2 to 3 garlic cloves;then add a medium size onion pieces and saute it for few seconds.

Add three red chillies then saute it for few seconds;use kashmiri red chillies for more spiciness.

Add a cup of washed mint leaves ;here i am preparing mint chutney ;you can even add fresh coriander leaves for more taste.

Add 5 to 6 curry leaves and saute it for few second till it cooks completely.

Add 5 to 6 coconut pieces into the mixture and let everything cook for few seconds.

Add a salt for taste ;use little bit salt because we need to add salt for another chutney.

Turn off the flame and allow them to cool for few seconds then transfer into a blender jar.

Now blend it for 2 to 3 minutes till it turns semi thick paste or thick consistency.

Now our tasty mint chutney is ready;transfer it in a separate bowl and keep it aside.

To prepare tamarind chutney;take a lemon size tamarind and soak it for 3 to 5 minutes.

After 3 to 5 minutes squeeze the tamarind finely;when it get thickens filter it separately.

Now add a little bit of sugar or little bit of jaggery and mix it well.

Now tamarind chutney is ready;tansfer it in a separate bowl and keep aside.You can add few dates if you like.

Turn on the flame;add two medium size potatoes;close the lid and leave it for one to two whistle.

After one to two whistles;when the pressure completely come down;open the lid and allow it to cool down.

Take a medium size tomato and cut it into small pieces;now take medium size onion and cut it into small pieces.

Now peel of the potato skin completely and make into thin slices or cut it into small pieces.

Now arrange the puris on a separate plate on a flat surface for stuffing process.

Now top it up with boiled potato slices;in this stage you can sprinkle little bit of chat masala if you prefer.

Now add chopped onions over the potatoes;you can sprinkle little bit of black salt if you like.

Now add small pieces of tomatoes on top of the puris;use deseeded tomatoes if possible.

Sprinkle red chili powder for every sev puris;you can even add red chili chutney for more spiciness.

Now top it up with mint chutney as much you required;you can sprinkle chopped coriander leaves if you like.

Then top it up with tamarind chutney or sweet chutney over the sev puris as much you want.

Now squeeze the lemon or add a drop of lemon juice for each sev puris.
