Ingredients of Schezwan fried
STEP : 1
The key ingredients to prepare schezwan fried rice,we need ,rice,green peas,onions,french beans,mint leaves,green chillies, red chillies,ginger,garlic cloves,capsicum,carrot,beans,cabbage, cumin seeds,green chilli sauce,lemon,tomato ketchup,black pepper,oil and salt.

Turn on the flame ,place a cooker,add the well soaked half boiled rice in a cooker.

Add four cups of water along with the well soaked rice mix it once again.
STEP : 4
Close the pressure cooker lid and leave it for two to three whistles in a high flame.

To make our main ingredients of our schezwan sauce ,add few red chillies in a bowl.

Add three to four cups of water and let it soak it for 30 minutes.

When the pressure comes down ,open the lid and seperate the required amount of boiled rice.

After 30 minutes,drain the red chilli water completely and add the red chillies in a blender.

Blend it for few seconds till it turns semi thick consistency and add little bit of water.

Again blend it till it turns smooth paste and keep the red chilli paste aside.

Turn on the flame,place a pan or vessel add 5 to 6 tablespoon of cooking oil.

Add half cup of garlic cloves ,stir it slowly for under 10 minutes in a highflame.

Add half cup of chopped ginger ,stir it slowly for under 3 minutes in a highflame.

Add the blended red chilli paste along with the frying ingredients and mix it completely.

Add a tablespoon of salt or as per your taste and mix it well thoroughly.

Add two tablespoon of tomato ketchup along with the boiling sauce and mix it completely.

Squeeze a half portion of lemon juice along with the mixture and mix it well.

Add a little bit of sugar for a blended taste and mix it completely ,let it cook.

When everything is complete ,turn off the flame and transfer the sauce in a bowl.

Turn on the flame,place a pan or vessel ,add half cup of cooking oil in it.

Add a tablespoon of cumin seeds or shah jeera and let it splatter for few seconds.

Add a cup of shallot onions and saute it till it turns nice golden brown.

Add the blended ginger garlic paste along with the frying ingredients and mix it completely.

Add a cup of finely chopped or lengthy capsicum and saute it for few seconds.

Add a cup of green peas or frozen peas along with the mixture and mix it.

Close the lid and let the fried cooked under 5 to 10 minutes in a medium flame.

When it is half cooked add a tablespoon of salt and mix it for few seconds.

Add half cup of fresh mint leaves and mix it well ,let it boil for a second.

Add two cups of finely chopped or lengthy cabbage and saute it for few seconds.

Add two tablespoon of schezwan sauce along with the vegetables and mix it using big spoon.

Add a tablespoon of black pepper powder or white pepper powder for better spices along with ingredients.

When the vegetables are well cooked,add the parboiled rice along with the fried vegetables .
