This is a Rajasthani style Khichdi which is very spicy and made with some standard vegetables like carrot, beans, peas and egg plant. This is a unique khicdi different from the other variant because it does not have any lentils in it and is only made with aroma rice.

Rice khichdi recipe

Take the baby brinjal and cut it along the length into 2 halves, peel the carrot and cut it into thin long slices and cut the beans into 2 halves

Heat oil in a kadai and add the coriander seeds and cumin seeds, along with the red chili and bay leaf and fry them till brown. Put the rice in the kadai after washing it and fry well.
