STEP : 1
Take the baby brinjal and cut it along the length into 2 halves, peel the carrot and cut it into thin long slices and cut the beans into 2 halves
STEP : 2
Peel and wash the onion and cut it into thin long slices as shown in the image, chop the tomatoes and slit the green chilis.
STEP : 3
Heat oil in a kadai and add the coriander seeds and cumin seeds, along with the red chili and bay leaf and fry them till brown. Put the rice in the kadai after washing it and fry well.

Now add the salt, turmeric and mix it well with the rice as shown in the figure and then cook well for 5 minutes by stirring continuously

In a separate kadai add the onion, tomato and green chili and fry them well till golden brown and the tomato melts
STEP : 6
Add the carrot, beans and the brinjal to the kadai and also a pinch of salt and fry them well
STEP : 7
Now add the fried rice into the kadai and mix it well with the vegetables and stir continuously and cook well
STEP : 8
Add 2 cups of water and then slow cook the rice and vegetables by covering the kadai with a lid.

Cook well till the rice and the vegetables are boiled well and the water is drained off. Then it is ready to be served with asafoeitida and ghee and coriander leaves topping
