This is an alternate and a very easy uttapam recipe. It is made from maida and rawa in equal proportion and does not need the rice powder to be available. Also the urad dal need not be soaked and grinded. It is extremely healthy and nutritious and is prepared with a topping of cheese and paneer cubes. As an alternate to sambar and chutney this is served with garlic and dhanya chutney.

Ingredients of For uttapam preparation

4.00 tbsp Oil
1.00 cup Rava
1.00 cup Maida
1.50 cup Curd
1.00 cup Paneer
0.50 tbsp Salt
0.25 tbsp Tandoori Masala
1.00 cup Grated Cheese

0.25 tbsp Kalonji Seeds
1.00 cup Coriander Leaves
2.00 no Garlic Cloves
1.00 no Chili

For Uttapam Preparation

For the Uttapam Base. Take 1 cup of rawa (sooji) and 1 cup of maida and 1.5 cups of plain curd.

Take all the contents in a mixing bowl and add a pinch of salt to it. Mix all the contents along with the curd. If needed you can add a little water to the batter if it is too thick. Set it aside for 20 minutes.

For the topping. Take paneer cubes and chop them into very small pieces and add salt to them. Take a cup of grated cheese which will be added with the paneer.

Heat a little oil in the kadai and fry the paneer cubes and add the tandoori masala to it and let it cook for 2-3 minutes.

Now fry the base of the uttapam. Take the batter prepared in step 2 and make a roundish shape and put it on a tawa with very hot but little oil. Fry well on one side so that it becomes golden.

For Chutney Preparation

Green Chutney:- Make a paste of the coriander leaves, green chili and garlic. Add oil in a tawa and heat it. Add the kalonji seeds and fry the coriander paste for a while so that the garlic gets cooked. The chutney is now ready and can be served with the uttapam.
