For Uttapam Preparation
STEP : 1
For the Uttapam Base. Take 1 cup of rawa (sooji) and 1 cup of maida and 1.5 cups of plain curd.
STEP : 2
Take all the contents in a mixing bowl and add a pinch of salt to it. Mix all the contents along with the curd. If needed you can add a little water to the batter if it is too thick. Set it aside for 20 minutes.

For the topping. Take paneer cubes and chop them into very small pieces and add salt to them. Take a cup of grated cheese which will be added with the paneer.

Heat a little oil in the kadai and fry the paneer cubes and add the tandoori masala to it and let it cook for 2-3 minutes.
STEP : 5
Drain off the excess oil and set aside the paneer in a bowl to be added as a part of the topping.

Now fry the base of the uttapam. Take the batter prepared in step 2 and make a roundish shape and put it on a tawa with very hot but little oil. Fry well on one side so that it becomes golden.

While one side is being fried add a few paneer cubes as toppings to the other side and let it cook for a minute.
STEP : 8
Now take small amount of grated cheese and add it on top of the paneer and the uttapam base. Cook till the cheese almost melts.
For Chutney Preparation
STEP : 1
Green Chutney:- Make a paste of the coriander leaves, green chili and garlic. Add oil in a tawa and heat it. Add the kalonji seeds and fry the coriander paste for a while so that the garlic gets cooked. The chutney is now ready and can be served with the uttapam.
