Ingredients of Rasmalai
STEP : 1
Take one liter of milk and boil it well and let the milk boil in low flame else if you boil in high flame the smell of the milk changes

Take one bowl of sugar ,this is the important ingredient of this recipe . I have taken one bowl of sugar for this quantity of curdled milk. take it as per your sweet consistency.

Take two to three cardamom , which is a essential taste maker . which gives authentic taste to this sweet.

now take on glass of water because this is one of the most important ingredients for this recipe, to make the sugar syrup water is important.

Now take one lemon which has got citric acid it which has capacity to curdle the milk , so that the milk completely gets curdled and its easy to collect curdled milk [ if you dont have lemon you can use vinegar].

Now you can clearly see the milk getting curded down ,now keep the flame in a medium level, and now you can see it as milk and water content gets separated. Ensure the flame is medium for ten minutes after adding lemon . later swith off the stove

Now take a bowl and stainer and keep it set ready. Once the curdled milk completely cools down you can proceed to next step, once you keep bowl and staner ready its easy.

Now transfer the curdled milk into the stainer carefully and do it as there will be a water content too. do not Waste any amount of curdled milk.

Now cleanly wash it with water as we have used lemon to break the milk. Strain the water completely in this process. because if water is there we wont get that consistency,

Now take a neat and clean cotton cloth and put the washed curdled milk and ensure in this step too that there is no water.

Now tightly wrap the cloth and put a knot and keep it in a bowl and set it aside for at least one hour . now keep it in a cool place .do not refrigerate.

Now remove the wrapped cloth and keep it in a bowl. now you can see the water free curdled milk. now keep it for five minutes.

Now kneed it nicely for more than ten minutes so that it will be easy to bring it to a form without breakage .so kneeding is a important step.

Now make a ball shape of it by kneeding it.so if there is a perfect shape and if its not sticking to your hand then its like perfect kneeding.so the kneeding is perfect

Now take a small amount from that and start making it into shapes which you like . I have made it a circle shape. Make it in a medium size , do not make it into a bigger size as once you put it in sugar syrup it will double its size.keep the needed balls ready in a plate.

Now take a cooker add the sugar to it and fry it for some five minutes. so that once the sugar becomes warm it will easily dissolve.

Now take water and add it to the sugar ,now as the sugar is warm it will dissolve easily. so dont keep it in a high flame as the sugar in high flame will stick to the lower bottom of the cooker. so keep it in lower flame .keep stirring it occasionally.

Now add cardamom to the sugar mixture when its become heated.stir occasionally and allow it to boil in lower flame only.

Now allow it to boil completely in low flame and ensure its low flame now in this stage you can check the sweetness and if you feel its sufficient dont add sugar, if you feel you want sugar you can add at this stage. And allow it to boil.

Now take the needed shaped balls and put them carefully into the cooker and be careful while adding it as the sugar syrup is boiling.

Now close the cooker lid allow it to get in with two whistles. do not disturb the cooker until it becomes cool. be patient in this step. once its cooled keep a bowl ready.

Now take a serving bowl and put it in it and keep it without disturbing. you can cool it in refrigerator for at least one hour and use it because this dessert or sweet is preferred to be had when its cold. this is the last and final step of this sweet. Now Rasmalai is ready
