Ingredients

- 1.00 cup Pumpkin
- 0.50 cup Black Eyed Peas
- 0.25 tbsp Turmeric Powder
- 1.00 tbsp Chilly Powder
- 0.50 tbsp Salt
- 2.00 tbsp Grated Coconut
- 2.00 tbsp Dried Red Chilly
- 0.50 cup Onion
- 0.25 tbsp Mustard Seeds
- 1.00 tbsp Oil
Instructions
Pumpkin Erissery
- Rinse soak black eyed peas in water and add them to a pressure cooker and bring them to boil for three to four whistles
- Peel off the Yellow pumpkin skin,wash them and chop them into small cubes as shown in the picture
- Heat a pan then add some water and bring them to boil,when water gets boiled,then add the chopped pumpkin slices with them
- Add enough salt for them and stir well then brings to boil for few minutes
- Then add a pinch of turmeric powder for them,which acts as anti oxidants and gives a color for this recipe
- After few minutes add needed red chilly powder with them and stir well for few seconds and brings to boil
- When the pumpkin gets boiled and the added water is little dried,now add the pressure cooked black eyed peas with them and stir well
- When the vegetable and the peas are mixed together and the pumpkin comes to little mushy and now add the grated coconut with them, and stir well
- Heat a tempering pan,add little oil with them and add some mustard seeds and two dried red chilies with them
- Then add fine chopped onions slices with them and saute well for few seconds till it gets transparent
- Then add the tempered onion mixture over the prepared pumpkin and black eyed peas mixture
- Mix them well and serve hot with hot plain or steamed rice,with tasty sambar or rasam recipes.
