Ingredients of Pudalangai chutney
Pudalangai chutney

STEP : 1
Take one or two medium sized snakegourd which is call it as pydalangai un Tamil,you may rinse and fine chop them by removing Thier seeds,

Slice one Onion,tomato,peel some garlic pods,fube Slice some ginger into thin slices,and also bring some dried chilies and a small ball sized tamarind,

Heat a pan add two tbsp of oil and add one tbsp of urad dhal and one tbsp of chana dhal,a nd roast them for few seconds,

Then add some dried chilies about the spicyness you need and roast them Well for few seconds,

Then now add some chopped green chilies,garlic pods and ginger slices in to them and saute for few seconds,

Then now add some sliced onion into them and roast well for few seconds till it comes to translucent,

Then now add some chopped tomatoes into them and saute for few seconds till it comes to smash,

Then now add those well rinsed and fine sliced snake gourd into them and saute well for few seconds,

Then now add enough salt for them and saute for some more minutes till added veggies comes to well cooked,

Then now add a small ball sized tamarind into them and saute for few seconds,

Then now add half a tbsp if Kashmiri red chilly powder into them and saute for few minutes,

Then now stir well for few seconds till the raw smells completely goes off and then now the veggies comes to soft,

Transfer the sauted Onion and veggie ingredients into a wide plate and let them brings to cool,

When the sauted ingredients comes to cool,and add it to a mixer jar and blend them Well,

Blend them Well as smooth paste by adding enough water into them and fine paste,

Then now transfer the blended paste to a mixing bowl and add some water to dilute and adjust the salt at this stage,

Heat a tadka pan add one tbsp of oil and add some mustard seeds and brings it to splutter,

Then now add one dried red chilly into them and roast for few seconds,a nd also add some curry leaves too,

Transfer the tempered oil and mustard seeds and red chilly mixture into that prepared pudalangai chutney mixture,

Add some fine chopped coriander leaves into them and stir well till it mixed well,

Finally garnish well and serve hot with tasty hot roti or chapathi recipes,and also good to serve with idly or dosa recipes.
