This is a very tasty prawns biryani and this is a mix of Kozhikode and kochi style biryani and about chutney ,this is a good combination with biryani it gives a fresh taste . We need medium or large size prawns for biryani.
Prawn Dum Biryani – Tasty And Spicy Prawn Dum Biryani Recipe
Prawn dum biryani is very tasty and spicy. This is a good combination with biryani it gives a fresh taste. It is very easy to prepare. It made by during festivals and functions.
Ingredients
For Rice Preparation
- 1.00 tbsp Oil
- 1.00 gram cardamom
- 1.00 gram cumin seeds
- 1.00 gram cinnamon
- 1.00 gram clove
- 0.20 nos bay leaves
- 0.25 tbsp pepper
- 1.00 cup onion for rice
- 3.00 cup jeera kashaala rice
- 6.00 cup water
- 1.00 tbsp salt
- 1.00 tbsp lemon juice
For Prawns Masala Preparation
- 2.00 tbsp Oil
- 2.00 kg prawns
- 0.50 tbsp chilly powder
- 0.25 tbsp turmeric powder
- 1.00 tbsp Salt
- 2.00 cup onion for gravy
- 0.50 cup green chilly
- 1.00 tbsp ginger paste
- 1.00 tbsp garlic paste
- 2.00 nos tomato
- 2.00 tbsp pudina leaves
- 0.50 cup water
- 1.00 cup coriander leaves
For Chutney Preparation
- 1.00 tbsp Ginger paste
- 1.00 tbsp garlic paste
- 0.50 cup pudina leaves for chutney
- 0.25 tbsp Coconut
- 0.25 tbsp green chilly
- 3.00 nos small onion
- 0.50 tbsp salt
Instructions
For Pulao Preparation
- Clean 3 cup rice using water and keep 6 cup water to boil, heat a pan or Kadai and add ghee to it, when it Melts put the ground spices like cardamom,clove etc to it.
- When it’s nicely roasted put sliced onion and saute it well, when it’s brawn add the washed rice to it. Let the excess water gets evaporated.
- Then add the boiled water, some salt, lemon juice and stir well, then close the pan and wait until the rice gets cooked well.
- Marinate the cleaned prawns using chilly powder, turmeric powder, salt And keep this aside for half an hour, then heat a pan.
- Pour oil to it and make a shallow fry of the marinated prawns and then wipe off the excess oil, repeat same with all prawns.
- Then without offing flame to the same oil put 3 onion sliced and stir until it’s brawn then add tomato ,ginger garlic green chilly paste and the ground spices same as rice to it.
- Add pudina leaves also and saute everything well and when it is translucent add the fried prawns to it and mix it well.
- Then add some water and close the pan for ten minutes, when it is nicely cooked pour the curd to it. Mix it well.
- Wait for about five minutes, keep the flame low and Kadai closed. Then off the flame and add some coriander leaves to it.
- Now we can go for the dum part, for that keep the Kadai to put dum add ghee to it and when it melts put some prawns masala and then ghee rice.
- Meanwhile heat a Kadai and put some ghee to it when it melts fry some onion and roast some cashew nuts and raisins.
- Then to the rice pour some roasted nuts, fried onion, freshly made garam masala, two drops of rose water, little coriander leaves and little ghee on it.
- Keep it for twenty minutes in low flame, for putting dum the lower layer should be masala and upper layer rice and on top of rice pour the garnish leaves and nuts. Then mix it well carefully.
- And finally our tasty prawns dum biryani is ready to serve, transfer to the serving dish. Serve it along with salad pickle and pudina chutney.
For Chutney Preparation
- Now we can make the pudina chutney take a small blender put three shallots a small piece of ginger, a garlic and some pudina leaves to it.
- Then pour half cup of coconut and one or two green chilly to it ,use freshly grated coconut so it will give more taste.
- Grind it well until it becomes a smooth paste and pour some salt also, add green chilly as per your taste.
- Transfer the pudina chutney from blender to a serving dish and we can have it along with biryani or dosa and so on.
- Our pudina chutney and biryani is ready to serve, use medium sized or big sized prawns for making biryani, i used medium sized prawns.
