Ingredients of Potato podimas
STEP : 1
Firstly, wash the potatoes. Now take a cooker add required water and boil the potatoes in it. Leave for about 4-5 whistles.

Check whether the potatoes are boiled correctly. Do not over boil it, keep this aside in a plate to cool.
STEP : 3
Once it is cooled down, peel the skin. Now smash the potatoes roughly by using a fork. Do not smash it into a paste.

Chop the onions, green chilies. Chop them not small pieces. keep the curry leaves, salt, mustard and masala powder ready. i have used sambar powder.

Now take a pan, add oil to it let it heat then add mustard.after it shatters, now add curry leaves.
STEP : 6
Now add the chopped onions and green chilies into the pan and saute it well till the onion turns golden brown.
STEP : 7
once the onion turns golden brown, now add the smashed potatoes into the pan and mix it well. now add 2 tbsp of oil and mix it again.
STEP : 8
Now add required salt and the masala powder and mix it well. Keep the flame in low and keep mixing it for 2-3 min.
