This is one of my favorite dishes. The only thing I wish to suggest is that the potatoes are tough and stay that way with the amount of cooking shown. May I suggest that the potato be boiled first and then added to reduce the cooking time and give it a particular taste too. This is a recipe that needs very little cooking as it is a green leafy vegetable and too much cooking will lose all nutrition.
