Ingredients of Pickled eggs
STEP : 1
Ingrients: egg - 4, garlic -1 clove, 3 red chillies, 2 green chilies, ginger - one small piece, and curry leaves.

Cashmiry chilli powder 1 tsp, turmeric powder 1 tsp, salt 2 tsp, sugar 1tsp, mustard.

Next ingredient is 1/4 cup vinegar. Vinegar is added as a natural preservative, which prevent the growth of bacteria and fungi hence increases the shelflife of pickle.

Remove the outer skin of garlic.Crush the garlic. Do not forget, it should not be very pasty.I used small size traditional stone grinder.

Take a small piece of ginger, after removing the outer layer crush this with the grinder.( you can use electric mixer grinder also.

Take the boiled egg and cut it into small pieces. Heat the pan pour 3 tsp oil and add the egg into this.

Transfer this fried egg to another dish and add mustard to the pan. When it sputters add red chillies.

To this, add crushed 1 tsp of garlic, green chilli, and ginger. Saute on a low flame till it becomes light brown. Add curry leaves to this.

Add 3 tsp kashmiri chilli powder , 1 tsp turmeric powder and stir for a minute.

Add fried eggs to this masala.Mix nicely.Add vinegar, powderd sugar and salt. Stir till it becomes semi gravy.

Turn off the fire. Transfer the egg pickle to a serving dish.Serve as a side dish, and yes because this is pickled you can store the leftover in refridgerator over a long period of time.
