Pesarattu dosa is a famous dosa recipe of India which is the most popular dosa dish of Andhra Pradesh. Pesarattu means green gram dal, which is very healthy and a nutritious dal variety.
Green gram is rich in potassium, magnesium and fiber. Also it is high in antioxidants which reduces the risk of heart diseases. To include green gram in your regular diet, making this yummy pesarattu dosa is a good option.
Instant dosa recipe
This pesarattu dosa is an instant dosa recipe which does not require any fermentation time.
You just have to soak the rice and green gram for 2 to 3 hours and then you can grind it into batter. And yes you can start making dosas as soon as you grind the batter.
Am using some green chilli, ginger and curry leaves while grinding the batter just to improve the taste and flavour of the dosa. Adding fresh curry leaves will give a nice vibrant green colour to the dosa.
If you don’t like any of the flavours then you can simply skip the ingredients and make plain pesarattu dosa.
Variations in pesarattu dosa
Today I am making onion pesarattu as everyone in my family loves onion dosa. Am also adding some fresh coriander leaves along with onions.
You can make variations like onion tomato pesarattu dosa, masala pesarattu dosa, ghee pesarattu dosa or anything of your own.
If I have any leftover veggies in my refrigerator, I make the veggies as stuffing for my pesarattu dosa. Trust me it tastes really good to eat the dosa with the crunchiness of the veggies.
You can also make cauliflower pesarattu dosa, mushroom pesarattu dosa and also pizza dosa. When I don’t have rice and urad dal dosa batter, then this pesarattu dosa gives me a hand always to simplify my dosa cravings and my dinner work too.
You can send this dosa as your kids lunch box recipe also. Just spread some fruit jam or tomato ketchup, roll it and send. It tastes different and they will definitely love the twist in their lunch box.
Way to make crispy pesarattu dosa
Sprinkle some water in your dosa pan before making each dosa, this will help in regulating the heat in your dosa tawa. Add 1 to 2 teaspoons of oil all around the dosa to make it crispy.
And the pro tip for making the best crispy dosa is cooking the dosa in medium flame to cook it uniformly golden colour. Keeping high flame may burn your dosa, so be cautious.
Ingredients of Pesarattu
STEP : 1
The peel off the outer skin of onion and fine slice them as very fine cutting and also fine chop some green chilies, curry leaves and coriander leaves.

Then take the one cup of green gram, wash the gram without dust to serve cup.

Next take a bowl and add the half cup of rice because then dosa comes to soft flavour.

Then take the large bowl and add the green gram and half cup of rice mixed very well.

Then take the two cup of water added the one cup green gram and rice soaked overnight.

Then six hours later to see the gram and rice they soft soaked and remove the water.

Next take a mixi jar and add the green gram to grend the paste before they added the ingredients.

Mix well the ingredients and then now add the fine slice green chilies it is comes from spicy.

Next added the fine chopped half tbsp ginger with comes from flavour and different taste.

In a blender add soaked green gram along with water soaked rice and all the ingredients.

The consistency should neither be too thick nor too thin and carefully to grend them.
