Pesarattu recipe is very tasty and crispy dish. This is famous morning breakfast recipe. It is a healthy recipe so that kids can have these dish at any time, easy to make at home.
Ingredients
For Dosa Preparation
- 1.00 cup Green gram dal
- 0.50 cup Raw rice
- 0.25 cup Water
- 1.00 nos Ginger pieces
- 4.00 nos Green chillies
- 1.00 tbsp Cumin seeds
- 1.00 tbsp Salt
- 1.00 tbsp Oil
- 1.00 cup onions
- 0.50 cup grated carrot
- 0.25 nos Ginger
- 0.50 cup Coriander leaves
- 1.00 tbsp Ghee
- 0.50 cup Oil
For upma preparation
- 1.00 tbsp Mustard seeds
- 1.00 tbsp Cumin seeds
- 1.00 tbsp channa dal
- 1.00 tbsp Urad dal
- 0.50 cup Peanuts
- 1.00 nos Ginger pieces
- 10.00 nos Curry leaves
- 4.00 nos Green chillies
- 1.00 cup onions
- 0.50 cup Coriander leaves
- 3.00 cup Water
- 1.00 tbsp Salt
- 1.00 cup Rava
Instructions
For Green Gram Batter Preparation
- The key ingredients to prepare peasarat upma ; we need rice; green gram ; urad dal;onions; carrot;green chillies; ginger;coriander leaves;rava; peanuts;curry leaves; cumin seeds;mustard seeds;channa dal;urad dal; salt and oil for taste.
- Take a seperate long bottomed vessel ; add a cup of whole green gram dal.
- Add half cup of raw rice or you can add par boiled rice .along with green gram.
- Wash it twice or thrice thoroughly and let the ingredients soak for overnight for better soaking.
- Take a blender ; drain the water seperately and add the well soaked ingredients in a blender jar.
- Add a small ginger piece along with soaking ingredients for more spices and better taste.
- Add 2 or 3 green chillies along with soaking ingredients or else you can add red chillies .
- Add a tablespoon of cumin seeds or jeera for more spices along with the ingredients.
- Add little bit of salt along with the soaked ingredients;don’t add too much in it.
- Blend it twice or thrice or till it turns coarse paste.Donâ t blend too much thin.
For Upma Preparation
- For Roasting; take a seperate kadai in a low flame ; add a cup of sooji.
- Roast the sooji or rava in a low flame and keep it seperate in a bowl.
- For tampering take a same kadai in a low flame ; add four to five tablespoon of oil.
- Add a tablespoon of mustard seeds and let it splatter for few seconds in a medium flame.
- Add a tablespoon of cumin seeds and let it splatter for few seconds in a medium flame.
- Add a tablespoon of channa dal and let it fry for few seconds in a medium flame.
- Add a tablespoon of urad dal and let it fry for few seconds in a medium flame.
- Add a cup of peanuts and let it roast for few seconds in a medium flame.
- Add a tablespoon of finely crunched ginger and saute for few seconds in a medium flame.
- Add 5 to 6 curry leaves along with the ingredients and leave it to splutter for few seconds.
- Add 3 to 4 small pieces of green chillies ; donât fry the green chillies in high flame so that the tempering taste will gone.
- Add a cup of chopped onions and mix it well ; let it fry for few seconds.
- Add a finely chopped coriander leaves or cilantro along with the fried onions and let it fry.
- According to the measurement add three cups of water for one cup of sooji or rava.
- Add a tablespoon of salt or as per your taste and mix it;let it boil.
- When it boils completely;add a cup of roasted sooji and mix it side by side.
- Mix it continuously ;Soft upma is ready now then turn off the flame and close it.
Preparation For Pesarat Dosa
- Turn on the flame;Heat the tawa or griddle; add a little bit oil and spread on all sides
- Now spread one laddle thick batter and spread it evenly on a round shape manner.
- Sprinkle few finely chopped onions over the dosa and let it boil in a low flame.
- Sprinkle few finely grated carrot over the dosa and let it boil in a low flame.
- Sprinkle few finely grated or crunched ginger over the spreaded dosa and let it cook.
- Sprinkle few finely chopped coriander leaves or cilantro on top of the dosa;let it cook.
- Add a tablespoon of ghee or butter on top of the dosa and spread it.
- Add two or three tablespoon of cooled upma on centre part of the spreaded dosa.
- Close it evenly on both sides and press it gently.Take carefully after it make crisp and transfer them in a seperate plate ; our healthy Andhra pesarat upma are ready to serve hot sambhar or coconut chutney.
