Ingredients of Peerkangai kootu

Al the ingredients are taken as per the measurements as mentioned above. The vege ridge guord, onions are grated before. Moong dal is the base for the curry.

Moong dal is soaked for twenty minutes. It should be noted that the dal should not be over soaked, as the curry needs dry dal powder.

Firstly, it is required to heat the soaked dal in a pan. Take a pan and heat the soaked dal, till it turns soft, as shown.

Now transfer these heated dal into a grinder for making it to a powder. Two complete grinds makes it to powder.

Transfer the fine coarse of powder into another bowl. This dal is now ready to be added as a base into the recipe.

Now take another pan and pour oil into it for seasoning. Put all the seasoning seeds and let it splutter and crackle.

After it is done, add the vegetable ridge guord into the pan. Allow it to cook, till it turns to brown.

The colour of the vegetable changes to light green in colour, indicating that it is cooked. Add coconut grated at this stage.

Also add dal powder into the pan. Stir it well. Allow the dal to be cooked completely. Close the lid, till a pleasant flavour is observed.

Allow it to cook for fifteen minutes, so that the coconut and dal mixes well and forms a dry consistency with the vegetable.

Transfer the yummy, hot and traditional kootu into a serving bowl. It serves four. This is now ready to be tasted.

Finally, the recipe needs good garnishing. Spread the recipe with corriander leaves, which adds a different kind of aroma to the recipe.
