Ingredients of Parwal curry
STEP : 1
Take chopped fresh coconut, one cup rice, peel and slightly cut potol or parwal, one bay leave, two cardamoms, two cloves in a plate.
STEP : 2
Marinate the cut potol or parwal with turmeric powder and salt and keep it a side at least for 10 minutes. Heat oil in a non-stick pan and shallow fry the parwal or potol.
STEP : 3
Take out the fried potol or parwal on a separate plate. Now take another non-stick pan and add mustard oil, heat it for 2 minutes and then add bay leaves, two cardamoms, cloves and saute it for few second on low flame.
STEP : 4
Now add rice and saute it at least for 10 minutes on a low flame. You can see the colour of rice is changing to golden colour. At that point turn off the flame.
STEP : 5
Now take the chopped fresh coconut and grind it in a grinder and take it out in a bowl. Add the grated coconut and mix well, cover the non-stick pan for 10 minutes on a low flame.
STEP : 6
Take 1 inch of ginger and chop it, also take one tablespoon of cumin seeds. Take little water and grind both ginger and cumin seeds to make a fine paste.
STEP : 7
Now you can see the rice and grated fresh coconut are completely mixed and a sweet aroma is coming out from it. Now add the paste of ginger and cumin seeds.

Add turmeric powder, salt as required and mix well. Now add the fried potol or parwal and mix well. Turn off the flame and add pinch of sugar and again mix it.
STEP : 9
Add garam masala and ghee. Transfer it to a serving plate and garnish with chopped coriander. Enjoy it with steamed rice.
