STEP : 1
Take half of a papaya and peel it and wash it very well and clean it before grating into fine slices.

Make a paste of the ginger and coconut. Wash the potato and peel it and cut into cubes. Take the puffed pulse and set it aside.

Grate the papaya into fine thin slices using a hand grater as shown in the image. This can be cooked without boiling the papaya as the pieces are very thin.

Heat oil in a kadai and add the panch foron (five spices ), bay leaf and fry the puffed pulses along with it and fry till they are brown in color. Drain the oil and set it aside.

Add the potato cubes and fry them well till they are brownish in color and soften slightly and can be cooked with the rest of the grated vegetables.

Add the tomato and slit green chili and fry them well till the tomato softens and melts with the rest of the ingredients.

Add the coconut paste and the ginger paste into the kadai and mix it well with the rest of the ingredients.

Add salt, sugar and mix it well and also add the green peas into the kadai and fry them well with the other ingredients.

Add turmeric powder and crush the fried puffed pulses and add it to the kadai. Mix all the ingredients and cook for a minute or two.

Add the grated papaya to the kadai and mix it well with the rest of the masala and cook it well. Once all the ingredients are boiled the vegetable is ready to be served with garnishing of ghee and garam masala powder.
