Ingredients of Palada payasam
STEP : 1
The key ingredients to prepare palada pradhaman,we need rice flour,jaggery,milk,sugar,cardamom powder,dry ginger powder,ghee,cashewnuts,raisins,dry coconut ,fresh coconut and salt.

In a seperate pan ,add two cups of water and bring it to boil for few seconds.

Add two cups of sifted or sieved rice flour in a seperate long mixing bowl.
STEP : 4
Add a prepared boiled water along with the rice flour and mix it with out lumps.
STEP : 5
Dissolve it completely without any lumps and donât add too much of water in it.

Take a half divided plantain leaf seperately,pour a little amount of rice flour in it.

Spread it evenly on all sides on top of the plantain leaf ,don't apply too much thick.

Now Roll the plantain leaf gently and tie the palntain leaf with the thick thread.

Similarly apply the batter over the plantain leaf and tie it with the thick thread.

Turn on the flame ,place a idli cooker add two cups of water in it.

Transfer the prepared and tied plantain leaf one by one on top of the molder.

Close the idli cooker lid and leave it for 10 to 12 minutes in a medium flame.

Grate the coconut pieces seperately,I used dry coconut mixture or desiccated coconut for these pradhaman.

Turn on the flame ,add a cup of finely crunched or powdered jaggery in a seperate vessel .

Add little bit water and mix it completely till it dissolves and let it boil.

After few minutes jaggery syrup starts bubbles and it completely dissolves turn off the flame Strain the prepared jaggery syrup using strainer to seperate the impurities in a seperate bowl.

After 10 to 12 minutes,open the idli cooker slowly ,rice ada has steamed very well.

Transfer the steamed plantain leaf in a seperate long vessel with full of water in it.

Remove the tie and open it slowly and seperate the rice ada in a seperate bowl.

In a seperate tawa or vessel ,add half litre of milk and bring it to boil for few seconds.

When it starts frothing ,low the flame and scrape the edges in between on a vessel.

Seperate all the boiled rice ada attached with the plantain leaf in a seperate bowl.

Add little bit of water along with the rice ada and keep it aside for few seconds.

Take a blender ,add few fresh coconut pieces in a blender to prepare fresh coconut milk.

Blend it for few seconds till it turns thick paste or a fine coarse paste.

Extract the coconut milk seperately using cotton cloth in a seperate bowl and keep aside.

Strain the rice ada after washing it twice using the strainer and keep it aside.

Turn on the flame ,place a tawa or pan ,add the strained jaggery syrup in it.

Add the rice ada pieces along with the jaggery pieces and let it boil for 5 minutes.

Add half tablespoon of cardamom powder or elaichi powder and mix it for better smell.

Add half tablespoon of dry ginger powder or sukku powder and mix for better smell.

Add a pinch of salt in a semi boiling mixture and mix it and let it heat.

Add the dry grated coconut along with the sweet ada mixture and mix it completely.

Add a cup of sugar or organic sugar as per taste and mix it for few seconds

When it is complete,turn off the flame and let it half cool for few seconds.

Let's roast the nuts,place a kadai add the remaining tablespoon of ghee and let it melt.

Add quarter cup of raisins and mix it,You can add crunched walnuts or pistachios if you prefer.

Add few broken cashews in a ghee and mix it,You can add crunched badam if you prefer

Add the roasted nuts in a half cooled rice ada mixture and mix it completely.

Add boiled and warm milk along with the rice ada mixture and mix it completely.

Add a cup of extracted fresh coconut milk and mix it completely ,let it cook for half a minute.

Turn off the flame,allow them to cool then transfer it in a serving bowl.Our tasty kerala style palada pradhaman is ready.
