STEP : 1
The key ingredient to prepare ghee rice with roasted onions,we need soaked rice,onion,cinnamon stick,cloves,bay leaf,cashew nuts,salt,ghee,crushed ginger,cardamom,green chill,fennel seeds,water for adding.
STEP : 2
Turn on the flame,heat oil or ghee in a low flame for frying onions.optionally (you can add vanaspathi or sesame oil for more taste,add 4 to 5 cashew nuts and saute it in a medium flame and separate it in a bowl,

Add grated or chopped onions and saute it well,untill it turns to light brown,saute the onions in a low flame,so that the onions turns crispy and taste.

When it turns golden brown,don't over fry the onions.so that the taste will goes on and separate the roasted onions in a bowl.

Place a pressure cooker,heat 3 to 4 tablespoon of ghee in a low flame when the ghee melts,add a few fennel seeds cinnamon stick,cloves or lavang add a piece of bay leaf and crushed green cardamom few add a finally chopped green chili and crushed ginger and saute it well for few minutes.

Now add the remaining grated onions and saute it well for a minute,until it turns light brown colour and also don't over saute here.

When the onion turns golden brown,add a tablespoon of salt for taste,you can also add crushed garlic into the mixture.

Add well soaked rice in a pressure cooker(note:thoroughly wash the rice grains for 2 to 3 times and soak it around 20 minutes by washing the rice grains in water,it will remove the excess starch and avoid sticky while cooking and stir it and fry a minutes.

Now add two cup of water and mix all the ingredients well,you can add a salt according to your taste after adding water.after a minute,close the lid,let it pressure cook the rice on low flame for a whistles.you can also add a same amount of water while cooking in a pan.

After two whistles,turn off the flame and let the pressure comes down automatically,open the lid,using fork to separate the rice grains,now transfer it to serving bowl and serve it with nice aroma.
