This is a spicy and very tasty curry using mutton and ginger as main ingredient we can reduce the pepper and red chilly addition. We can make this easily and serve to guest also and surely we will get complement.

Ingredients of Mutton roast

0.50 kg Mutton
1.00 tbsp pepper powder
1.00 cup onion
1.00 tbsp ginger paste
1.00 tbsp ginger chopped
1.00 tbsp garlic chopped
1.00 tbsp green chilly chopped
0.25 tbsp pepper
0.25 tbsp cardamom
0.25 tbsp cumin seeds
0.25 tbsp cinnamon
0.25 tbsp cloves
0.25 cup curry leaves
0.50 cup coriander leaves
0.50 tbsp chilly powder
0.25 tbsp turmeric powder
0.25 tbsp coriander powder
0.25 tbsp salt
2.00 tbsp oil
1.00 tbsp tomato sauce

Mutton roast

At the first step clean the mutton pieces and put this in a pressure cooker ,then put ginger paste and pepper to it.

then pour some turmeric powder and other ground spices like cardamom, cloves , cinnamon and cumin seeds to it, then put some water if needed.

Then close the pressure cooker and let it cooked ,wait for five to six visils, mean while heat another pan and put oil to it ,then add the fried onions to it.

we need onion in a fried state or you can take it when its brawn, see my onion is nicely fried ,translucent and brawn too.

Then take the fried onion out and keep it aside, if our mutton is cooked well off the flame and let it cool.

Then to the oil we had fried onion , put chopped ginger, garlic and green chilly to it, saute it well.

Mix it very well and then put some tomato sauce or some freshly prepared tomato paste to it,then stir well .

then take the fried onion and put this to the boiling mutton curry ,mix it well and keep the flame low.

After five minutes we can see that in our curry a separate layer of oil at upper side and that's it ,our dish is ready.

then transfer to the serving plate and enjoy the dish along with rice, ghee rice, chappathi ,appam or whatever you like.

We can made this recipe with basic ingredients..I tried this recipe tonight it came out very tasty, and my family members were enjoyed it..I added dried coconut which lends unique aroma and tastes. However if you do not have it you can also replace it with poppy seeds. It will still taste good....thanks for sharing with us..
