STEP : 1
Wash the basmati rice and drain off excess water, keep the water to boil, then heat a Kadai and put ghee to it,

When the ghee melts pour the spices to it and saute it well, mean while take the same amount of spice in another pan
STEP : 3
To this pan Pour some peeumjeerakam also ,keep the flame low and lel it roast well and then off the flame,let it cool.

Slice onion , tomato and then grind the ginger, garlic, shallots and green chilly separately using a blender or a mixer.

Now we can go to the rice part , pour one chopped onion to it and saute it well, when it's brawn,

Add the rice to it and let the excess water gets evaporate out, stir it after two minutes and when we can hear a kiri kiri sound add the boiled water to it ,pour salt and lemon juice and mix them close the Kadai.

Mean while marinate the mutton pieces using salt , turmeric powder, red chilly powder and keep it for thirty minutes. Check our rice stir it and if it's cooked off the flame.

Heat a small pan pour little ghee to it add little sliced onion to it ,when it is nicely fried add cashew nuts to it, when its roasted add raisins and stir well ,then off the flame and keep it aside.

Then check our roasted spices and when it is cooled grind it using a mixer ,we need this at the last stage of putting dum, so keep this also aside.

Then take a pressure cooker , keep it on flame and when it is hot pour oil ,when the oil is hot add remaining sliced onion to it ,stir well and add ginger garlic paste to it.

Add tomato , Add 5 pudina leaves ,little coriander leaves and stir well, then add the remaining spices to it ,stir well.

Then add the marinated mutton green chilly paste and add water if needed then mix it well and close the pressure cooker to get it cooked .

When it is cooked off the flame and then wait till the steam goes out and check the salt and spices is ok or not

Then add curd to it mix it well and we can close the pressure cooker again and wait for two Visils.

Then pour some coriander leaves to it and off the flame, mix it well .now we can go for the dum process

Heat a big Kadai that have enough space, pour ghee to it, it should be low flame ,it will be good if you place a dosa pan under the Kadai ,then add some mutton masala to it,

Then pour rice and add little coriander leaves, pudina leaves, freshly chopped tomato, freshly made garam masala powder and roasted nuts .

Repeat the same process , at below portion it should be mutton masala and upper portion it should be rice, then pour some ghee and two drops if rose water

Then close the Kadai tightly ,and keep it for twenty minutes ,then mix it well and serve hot our yummy biryani.
