STEP : 1
At the first step clean the brain of mutton and remove the veins from.it and clean it well ,use a plate with small holes so only water will go out.

Then pour some turmeric powder and salt to it and marinate it well, then keep this for half an hour.

Heat a pan add oil to it ,when it's hot add onion ,ginger garlic and green chilly and saute it well.

When it is brawn add tomato chopped and mix it well , close the pan and keep it in low flame.

When it is nicely cooked add the marinated brain to it and mix well ,keep it in low flame ,add water or oil as need.

Stir it in every two minutes and after some minutes when it is half cooked add two teaspoon of coriander powder to it.
STEP : 7
Then again close the pan and let it cooked well for about ten minutes and stir well ,if you want the brain in a roasted state you can off the flame.

If you want the brain in a crispy state add some more oil and let it get fried for five more minutes and then off the flame.
