Ingredients of Muthia

STEP : 1
The key ingredients to prepare steamed muthias ,we need lauki,gramflour,wheat flour,coriander leaves,red chilli powder,coriander powder ,cumin seeds powder,black pepper powder,lemon juice,curry leaves,sesame seeds,baking soda,turmeric powder,red chilli ,ginger and green chilli paste and oil.

STEP : 2
Take a single lauki or gourd and grate it finely then squeeze out the water from the lauki.

STEP : 3
Take a separate bowl or vessel,sieve one and half cup of wheat flour in it .

STEP : 4
Add three to four tablespoon of gram flour or half cup along with wheat flour.

STEP : 5
Add a pinch of turmeric powder so that it gives a good look color to the muthias .

Add a tablespoon of red chilli powder or else you can use red chilli flakes .

Add a tablespoon of coriander powder ,You can add two tablespoon of sugar if you prefer.

Add half tablespoon of cumin seeds powder for more spiciness, but it is optional only.

Add half tablespoon of black pepper powder or white pepper powder ,but it is optional only.

Add the grated lauki or bottle gourd along with the ingredients and mix it thoroughly.

After mixing it thoroughly ,add a tablespoon of ginger and green chilli paste and mix it well.

Add half teaspoon of baking soda or sodium bi carbonate along with ingredients , mix it thoroughly.

Add three to four tablespoon of lemon juice or squeeze the half portion of lemon juice.

Add a little bit of salt or according to a taste along with ingredients and mix it well.

Add two to three tablespoon of cooking oil to make a soft knead dough and mix it.

Add little bit water , knead with hands and make a smooth dough dont add too much water.

Now the knead dough is prepared ,then cover it under 15 to 20 minutes and keep aside.

Add half cup of finely chopped coriander leaves and mix it with dough ,lets start to shape it.

Now take a idli stand or idli cooker or momo-maker and place the shaped muthias in it .

Turn on the flame ,place a cooker add little amount of water ,when the water gets heat,place the idli stand.

Now close the idli cooker and let the muthias steamed under 20 to 25 minutes.

After 20 to 25 minutes ,open the lid,check it out with fork or knife if it is properly cooked.

when it comes clearly ,turn off the flama and cut them in to small pieces in a separate plate.

For tampering purpose ,turn on the flame,place a pan add 3 to 4 tablespoon of oil

When the oil heats,add a teaspoon of mustard seeds and let splutter for few seconds.

Add quarter cup of white sesame seeds and sauté it lightly ,make sure it should splutter in low flame.

Add 6 to 7 curry leaves in it and let splutter,you can add heeng 2 to 3 pinch if you prefer.

Add two pieces of red chillies and sauté them lightly in low flame,you can sprinkle some coriander leaves.

Add the muthia pieces one by one and mix it well,cover the lid and let it boil under 3 to 4 minutes.

When it completely cooks ,turn off the flame and place them separate serving bowl,our tasty steamed muthia is ready.
