Ingredients of Mushroom vindaloo
STEP : 1
Take the clarified apple juice in a cup. Take the chili powder, garlic cloves, ginger to be chopped and turmeric powder. Set aside the cumin powder and the coriander powder too. Take the clove and cardamom seeds.

Take the button mushroom and wash it very well and clean it and dry before it can be chopped and cooked.

Peel and wash the potatoes and cut it into cubes, chop the green chili and also chop the onion into small pieces

Take the washed mushroom and chop it into fine pieces along the length so that thin and long pieces are formed and is easily boiled.

Make a paste of the ginger and garlic along with the red chili in a mixture grinder as shown in the image.

Add the mixture prepared in the above step to the apple juice and make a red gravy of uniform consistency as shown in the image.

Take a stainless steel kadai and heat it very well and then add the oil to heat it too so that the spices and apple juice can preserve their color and flavor

Add the chopped mushroom to the kadai and fry them well till they soften as shown in the figure below.

After frying the mushroom set them aside and add the cloves and cardamom and green chili to the hot oil and fry them well till it starts smelling.

Add the potatoes and the red paste that was prepared earlier and fry them well and cook for some time so that the potato is cooked.

Cook the mixture well and keep stirring and add the coriander and cumin powder and mix well and cook for 23 minutes

Add the mushroom to the mixture and mix it well and cook it for another 45 minutes so that the dish is ready.

Take out the contents from the kadai and place it in a bowl where it would be served. Let it cool then serve with the garnishing.
