Ingredients
  

Urundai Preparation

  • 1.00 cup Green gram dal
  • 0.50 nos Dry ginger
  • 4.00 nos Green cardamoms
  • 1.00 cup Grated coconut
  • 1.00 cup Jaggery

Maida Preparation

  • 1.00 cup Rice flour
  • 2.00 tbsp Maida
  • 0.50 tbsp Turmeric powder
  • 0.25 tbsp Salt
  • 0.50 cup Water
  • 0.25 liter Oil

Urundai Preparation

  • The key ingredients to prepare munthiri kothu , we need whole green gram, jaggery, rice flour, maida, cardamoms, sukku powder turmeric powder , grated coconut and oil for deep fry.

  • Turn on the flame, place a pan , add a cup of green gram dal or whole green gram and dry roast.
  • Saute it for few seconds till it turns golden brown color, turn off the flame and let it cool.
  • Take a blender jar , add roasted whole green gram dal when it cools completely.
  • Add half pinch of dry ginger powder in a jar , if you had dry ginger powder or sukku powder , you can use it.
  • Add 3 to 4 green cardamoms for good smell, adding dry ginger powderis optional .
  • Blend it for 4 to 5 seconds till it turns semi coarse powder, donï¿œt blend it fine powder.
  • Turn on the flame , place a pan , add half cup of shredded coconut and saute it.
  • Roast it till it turns light brown color , you can add white sesame seeds for a taste but it is optional.
  • Take a separate mixing bowl,add a cup of blended green gram dal in a vessel.
  • Add roasted shredded coconut in a mixing bowl ,adding coconut shredded gives a rich taste.
  • Now mix them thoroughly and keep aside, its time to prepare jaggery syrup or sugar syrup.
  • Turn on the flame,place a vessel add a cup of jaggery ,using mandhai vellam gives a rich taste.
  • Add half cup of water and let it dissolve ,donï¿œt add too much of water for preparing syrup.
  • When the syrup boils thoroughly,check the jaggery syrup in a string consistency and turn off the flame.
  • Now pour the boiled Jaggery syrup into the mixture ,filter the syrup to remove the impurities completely.
  • Mix with ladle continuously,when the heat reduces ,mix it by using hands thoroughly so that the mixture blend nicely with syrup.
  • Grease a little ghee or oil on a palm, Take some amount of mixture and make it small round size balls .
  • In a same procedure ,do the remaining balls and keep it in a separate plate and leave it for 15 to 20 minutes so that it will get crumble.

Maida Preparation

  • To prepare a coating batter for mixture balls,take a separate vessel add half cup of rice flour .

  • Add two tablespoon of maida in it,adding of maida gives a sticky ness to a batter.

  • Add a pinch of turmeric powder for giving yellow color and too taste but it is optional.

  • Add a pinch of salt for taste and mix all the ingredients very well ,Lets prepare the batter.

  • Gradually add water little by little and mix all these ingredients by spoon with out lumps .

  • Batter should be light thick consistency,it should not be too watery so mix it according that.

  • Now its time to deep fry,turn on the flame ,pour required oil for frying and let it heat .

  • Take the crumble balls ,dip the balls into the batter then check it oil is ready to deep fry.

  • Drop the dipped balls one by one or bunch of balls at a time and let it fry for few seconds.
