Ingredients of Moong halwa
STEP : 1
The key ingredients to prepare ukkarai,Raw rice,Idli rice,Moong dal,green cardamom powder, dry ginger powder,raisins,cashewnuts, almonds,jaggery,vanaspathi,ghee and salt.

Add a cup of moong dal, saute it for few minutes until it gets roasted .

When it is dry roasted and splutters and transfer it in a plate ,add water.

Add half cup of raw rice and idli rice, saute it for few minutes until it gets puffed and transfer in a bowl..

When it is roasted ,transfer raw rice in a blender to make a rice flour.

Add half cup of roasted idli rice along with the raw rice in a blender.

Blend both the ingredients for few seconds till it turns nice or thin powder consistency.

Transfer the pan,add two tablespoon of vanaspathi and let it melt in a low flame.

Add a cup of blended rice flour or rava then saute it for few minutes.

When it is dry roasted ,slow down the flame then transfer it in a plate.

In a same pan,add the soaked moong dal and let it boil for few minutes.

To make syrup,add the crunched or powdered jaggery along with the pan or long vessel.

Add half cup of water and let it dissolve ,donât add too much of water ,let it boil.

Add a pinch of salt to enhance the taste and mix it continuously for few seconds.

Turn off the flame when the jaggery syrup comes to boil not too thick consistency.

Add the roasted rice flour little by little and mix it with out any lumps.

Add the jaggery syrup little by little and mix it and stir it ever occasional.

In a seperate pan,add a tablespoon of ghee and let it melt in a low flame.

Add few cashew in hot ghee and dry roast it for few seconds in low flame.

Add few badam or almonds in hot ghee and dry roast it for few seconds.

Add half cup of raisins along with the roasted nuts and mix it,it is optional.

Now add the roasted badam , cashews and raisins along with the sweet mixture and mix it.

Add half tablespoon of dry ginger powder or sukku and mix it continuously for few seconds.

Add half tablespoon of green cardamom powder or crunched and mix it continuously for few seconds.

When everything is complete, turn off the flame,allow the mixture to cool down for few seconds .Our tasty ukkarai is ready.
