A Traditional South Indian Side Dish Vegetable Sambar For Breakfast

Ingredients of Mixed vegetable sambar

STEP : 1
In a pressure cooker, add 1 cup of tuvar dal, add required water, turmeric powder and salt. Pressure cook for 10 minutes (approx. 4-5 whistles)

Meanwhile keep all the other ingredients ready. I have diced vegetables such as potatoes, carrots, beans, brinjal, drumstick etc.

Switch off the flame and allow the pressure to subside. After 2-3 minutes, open the pressure cooker and check whether dal is evenly cooked.

Now, add all the diced vegetables one by one. You can also add any other vegetable you like.

Mix dal and all the vegetables together. Add some coriander and curry leaves. Simmer for 5 minutes.

Now, its time to add the spice powders. Add required turmeric powder, chili powder and salt. Mix it well.

Add required amount of water. Close the lid and pressure cook for 2 more whistles or till vegetables are cooked.

Open the lid and check if vegetables are well cooked. Mix it well. Sambar is almost ready. Now, its time for tempering.

For tempering, take all the ingredients -mustard seeds, dried red chili, cumin seeds, sambar powder, coriander and curry leaves, pinch of hing etc

In a small pan add 3-4 tbsp of oil. When oil is hot, add the mustard seeds and allow it to pop. Add dried red chili and cumin seeds.

Add sambar powder, salt, coriander and curry leaves. Saute for 5-7 minutes till the raw smell disappear.

Add this to the sambar and allow it to boil for another 2-3 minites. Sambar is now ready to be served.

Transfer it in a serving bowl. It tastes really good when hot. It can be served with idly or dosai or even with white rice.
