This is a signature Mexican dish. The rice is very spicy and is cooked using long grained rice fibre. It can be served in small portions with any chicken or veg roasted item or boiled vegetables. It needs very simple ingredients and is easy to make.

Ingredients of Mexican rice

1.00 cup Basmati Rice
0.50 no Bell Pepper
0.50 no Onion
1.00 no Chili
5.00 no Mushroom
4.00 no Garlic Cloves
1.00 no Tomato
0.25 tbsp Salt
1.00 tbsp Olive Oil

Heat oil in a kadai and add the garlic cloves. Once the garlic is added fry them till it turns golden brown in color
