  • 2.25 cup Rice
  • 2.25 cup Sugar
  • 3.50 tbsp Ghee
  • 1.25 cup Kernel khopra
  • 1.00 cup Milk
  • 1.25 tbsp Cardamom seeds
  • 1.25 tbsp Red food colour
  • 1.00 cup Dry dates
  • 1.00 cup Almonds

  • First take rice and soak in water for 10 to 15 minutes. Before soaking rice wash the rice in clean water for 3 times. After washing rice soak it.in water .

  • Now till the rice is soaked let us now chop/ cut kernel khopra in small pieces , dry dates also in small pieces, but for almonds remove the skin by soaking in warm water then peel off the skin of almonds and cut it in small pieces.

  • Now take cardamom seeds and remove seeds from it crush the seeds in wet grinder until the seeds turn into powder.

  • After 10 to 15 minutes now cook the soaked rice on high flame by using gas stove.

  • Till the rice gets cooked now on the other side take a large bowl and add ghee in it.

  • After the ghee melts now add chopped almonds in it. Flame should be low to avoid over cook.

  • Now add chopped kernel khopra in it and fry till it changes colour. And raw smell of it gets disappear.

  • As the colour of kernel khopra and chopped almonds gets changed now add dry dates in it to fry further.

  • After few seconds add the powder of cardamom seeds in the bowl. Which was made by using wet grinder or crush it in powder.

  • Now slowly add milk in the bowl. I have used boiled milk here if you are using raw milk then first boil milk till the raw smell disappear.

  • Now add red food colour in the bowl. Here I have taken 1-1/2tspn. you can increase or decrease the quantity depending on your taste.

  • After adding red food colour stir it well and now add sugar in the bowl . The quantity of sugar depends on the sweetness.

  • Till the sugar dissolves our rice is cooked not fully. Cook the rice only half.

  • As the rice is cooked half now drain the excess water with the help of drainer or sieve.

  • Add the drained rice in the other bowl where sugar is dissolved, and the red food colour is added.

  • Now let the rice gets mix well and stir it, allow the rice to cook fully now. Till there is no excess of water remains in the rice.

  • Meetha rice is ready to serve. Serve it in a plate. Here I have used silver leaves for serving. You can serve it at room temperature.
