Ingredients
  

Maida Preparation

  • 2.00 cup Maida
  • 1.00 cup Wheat flour
  • 1.00 tbsp Semolina
  • 1.00 tbsp Ghee
  • 0.25 tbsp Salt
  • 0.50 cup Water

Masala Preparation

  • 1.00 cup Green peas
  • 1.00 nos Green chili
  • 1.00 nos Ginger
  • 1.00 tbsp Butter
  • 0.50 tbsp Cumin seeds
  • 0.25 tbsp Hing
  • 0.50 tbsp Turmeric powder
  • 0.50 tbsp Red chili powder
  • 1.00 tbsp Coriander powder
  • 0.50 tbsp Fennel seeds
  • 0.50 tbsp Garam masala powder
  • 0.50 cup Coriander leaves
  • 0.50 tbsp Salt

Instructions
 

Maida Preparation

  • The key ingredients to prepare peas kachori,we need green peas,maida,wheat flour,rava,butter,ghee,oil for fry,coriander leaves,green chilies,ginger,cumin seeds,fennel seeds,red chili powder,turmeric powder,coriander powder,garam masala.

  • Initially take two cups of sifted all purpose flour or maida in a separate bowl.

  • For preparing smooth dough add half portion or one cup of wheat flour in it.

  • Add little bit of semolina or sooji to make the layer crisp and mix it finely.

  • Add a tablespoon of ghee or clarified butter in mixed flour to make soft dough.

  • Add little bit of salt for taste ,Don’t add it too much ,we need to add salt for egg mixture.

  • Gradually add little by little of water and knead a smooth dough by using hands.

  • After kneading a soft dough ,close the lid and leave it under 10 to 15 minutes.

Masala Preparation

  • Turn on the flame,place a pressure cooker ,add a cup of green peas in it.
  • Add a cup of water in a fresh green peas ,no need to soak the fresh green peas.
  • Close the pressure cooker lid and leave it for a whistles then turn off the flame.
  • After a whistles when the pressure comes down completely ,slightly open the lid and drain the water.
  • After draining the water transfer the boiled green peas in a blender or mixie jar.
  • For more spiciness ,add a single or double green chilli along with the boiled green peas.
  • Add half ginger piece along with the ingredients and blend it a thin coarse paste.
  • Blend it for few seconds till it turns thick coarse paste and transfer in a bowl.
  • For tampering ,turn on the flame ,place a pan add a tablespoon of butter and let it melt.
  • When it melts, Add half tablespoon of cumin seeds and let it splatter for few seconds.
  • Add a pinch of hing or asafoetida along with the cumin seeds and mix it.
  • Let’s start to add spices,add a pinch of turmeric butter in a very low flame.
  • Add a tablespoon of red chili powder along with the seasoning ingredients and saute it.
  • Add a tablespoon of coriander powder or dhania then saute it in a low flame.
  • Add half tablespoon of fennel seeds for a taste ,saute it in a low flame.
  • Add half tablespoon of garam masala ,make sure flame should be in low then saute it.
  • Add the blended thick coarse paste and mix it completely let the spices blend with mixture.
  • Add half cup of fresh coriander leaves or cilantro and mix all those ingredients completely.
  • Add a little bit of salt or as per taste and mix it then turn off the flame.
  • When the stuffing mixture cools ,transfer the mixture in a seperate bowl ,don’t add water in it .

Preparation For Peas kachori

  • Take a knead dough and divide it into medium size balls or lemon size balls.

  • Roll the balls on a flat surface by dusting some flour ,roll it evenly on all sides.
  • Add a tablespoon of filling or stuffing mixture in center part of the flat roll.
  • Now bring all the pinched parts together and fold it center like shown in below image.
  • Roll the stuffed ball gently by simply dusting the flour in a flat surface or area.
  • Do the remaining balls in a same way ,roll it thick it should not be thin.
  • Let’S start to deep fry,turn on the flame ,place a pan,add required oil and let it heat.
  • Drop the roll one by one in hot oil and deep fry it in a medium flame for few minutes.
  • Flip the roll gently till it turns golden brown color and leave it for few seconds.
  • Drain the rolls completely using kitchen tissues ,our tasty peas kachori is ready to serve.
