Masala vada

STEP : 1
Chana dal also known as split Bengal gram ( kadale bele) is high in fiber, calcium, protein and folate. Its low in fat and helps lower cholesterol. This is the important ingredient of this recipe which gives authentic taste. Take one bowl of it which is a cleaned because sometimes there are chances of stones or dust in it.

STEP : 2
Now wash Chana dal neatly and soak it in a bowl full of water for more than 1 hour and if you have time you can soak it even for 4 hours. So Chana dal is hard when it soaks it becomes soft and it will be easy to blend. When you soak it if there is any color kind or dust in the Chana dal it leaves in the water so that you can wash it easily

STEP : 3
Now take one full garlic and clean the outer layer and keep it aside. Adding garlic gives good flavor as well. Garlic has high nutrition in it and is with less calories. Garlic is to include in this dish as it will grinded and tastes absolutely delicious

STEP : 4
Take one inch of ginger, remove the outer skin and wash it thoroughly as it has lot of mud in its outer skin. As we need to blend it chop/cut into small pieces. As you know ginger gives a very easy digestion when added to the food and it taste absolutely delicious

STEP : 5
Add four green chili . Let it be four green chili for one bowl of Chana dal because too much of green chili is not good for health. This is just to add the spice flavor, we can add red chili powder instead but to give the authentic spice its better to add green chili. It will be blended so it wont be much spicy also.

STEP : 6
Take two medium sized onions wash it thoroughly, and then keep it in water for few minutes to avoid tears in your eyes. Now chop/cut the onion carefully into small pieces and set it aside in a bowl. Do not chop/cut into big pieces which will be somewhat to eat.

STEP : 7
Now to a drier jar add little soaked Chana dal , four green chili , One full garlic , 5 gram ginger , two pepper seeds , two pieces of clove ,5 gram of cinnamon and required amount of salt and important thing is it should be blended without water . It should be blended into a medium small mixture.

STEP : 8
Blended mixture looks like this. Without adding water it will give you this consistency, if Chana dal is not blended into small mixture that is ok but rest all the spices like ginger, garlic, clove, cinnamon ,pepper , green chili should be blended into small mixture because when you eat it should not interrupt the flavor.

STEP : 9
Now blend the remaining Chana dal without adding water, let it be blended into the medium consistency, so that while eating it gives good taste. add it to a clean vessel which doesnt contain water because once you add onion it will also leave behind some water content , if the vada becomes watery you cannot do it easily it will be waste with all the efforts.

STEP : 10
Now add finely chopped/cut onions to the blended mixture and even add finely chopped coriander leaves this is what that gives the actual flavor for the vada. The coriander leaves are the authentic taste to these dishes.

STEP : 11
Add required amount of salt and mix it well. Mix it well so that the onions , coriander leaves and all the spices get mixed well. And keep it aside for ten minutes let it get mixed well .

STEP : 12
Heat oil and take a small ball of the mixture and spread it on your hand in a circular motion and you need to put in to the heated oil carefully since the oil is heated do be careful while doing this. Because since its Chana dal be careful.

STEP : 13
Add the vada to the heated oil and now let it fry well in deep oil fry. Let it fry upto golden brown be careful while your rotating the vada in the oil since its heated. Dont over fry it because you cant eat it as it turns black. Remove once its golden brown fry it in medium heat.

STEP : 14
So now golden crispy Chana dal vada or kadale bele masala vada is ready to serve . This is usually done in festival . You can even make it for snacks in the evenings by soaking it one hour prior you think of doing this vada. One of the south Karnataka authentic dish this is . Especially you can eat during rainy season that spicy n taste will give even more taste .
